Creative Cooking for Colitis

What I Liked:
Before reviewing this cookbook, I had no idea what colitis was, let alone how to cook for it. But after reading about the disease, and understanding what it's like to live with colitis, I can definitely see why a cookbook like this is necessary. I liked that I could essentially pick this cookbook up the day I came home with a diagnosis and have a tool that would help me cope with a difficult disease.

I made several of the recipes, myself. I can definitely see how they are simplified for the lifestyle of adding foods to test your body's response to them. I found that they would be just fine to make for family meals. It's not the type of cooking where the person with colitis would have to make a separate meal from what their family ate. I liked that a lot. I made the Stroganoff, which I liked. We also made the Rice Pudding, which I thought was fun, and could even be a palate of-sorts to add more foods to. Could be lots of fun. We added dried blueberries, and I enjoyed it a lot. I tried the Sweet Potato, which I'd never tried before and will definitely make again. And I made the Orange Pancakes (which are like crepes), which were great. I even had a big bag of oranges I'd just bought, so I used fresh orange juice, which made it just that much better. I highly recommend this cookbook to anyone who has colitis or knows someone who has it. She's also marked the recipes that would work well for weight loss, which I found helpful. Definitely check it out.

Not only did she walk the hard line of deciding to donate her mom's brain, but she is also on the brain donation list at the Brain Bank-Harvard McLean Hospital. She is married, has a combined family of six grown children, one grandson.

Haven't checked the recipes, but I know how valuable something like this would be. It requires people to be so careful of what they eat. So cool that their diet could be palatable enough for the whole family to enjoy!

Wow how amazing, you never realize how many diseases are out there and how many would need to eat differently than the average person!!!

I have a friend who is Gluten free and I already think that is tough enough!

I have ulcerative colitis and have had to be super careful about what I eat. Do the recipies call for a lot of foods with seeds? Too many of the cookbooks geared towards my disease use foods I can't have due to allergies and other problems. What was your favorite thing to make/eat out of this book? I might have to buy a copy if I can use it.

Hey, Erin! There were no seeds in the recipes that I could see, and certainly none that couldn't be omitted, I would imagine.

My favorite recipe was the orange pancakes. I actually made them again, with more careful measurements this time, and I liked them a lot. Very fragrant.

Hi Erin,
No, I don't use seeds in the recipes so it should be really good for you. The most valuable thing is that you will be building on the simple foods up to more complex recipes so it's fun to eat instead of worrying and you know by following the tips which foods really bother you versus those that are masked by others.
I'd be honored if you bought a copy. I'd love to hear what your favorite recipe turns out to be :-)

I actually love every one of these and use them all regularly. My family's favs are spiced roast beef, Mexican Lasagna,and the Sweet Potato and Apple Streusel. Oh, they also come racing for the Stroganoff :-)
